Renaud Laurent, the sommelier

A self-learner, Renaud Laurent gets his start in 1999 at the restaurant Mirabelle in London, where he learns about the most important wines, the vintages and wines from around the world.

He then joins the team at Seize, where he meets Eric Martins and Thomas Boullault. When the restaurant becomes la Table de Joël Robuchon, Robuchon offers him the job of head sommelier.

The restaurant obtains 2 stars in 2 years.

In 2005, Michel Troisgros calls on him for La Table du Lancaster, where he becomes head sommelier/chief buyer.

He discovers a cuisine that is more open to the world and the importance of the perfect accord between food and wine.

Upon his arrival at l’Arôme in 2009, the wine list is entirely revised : many “discovery” wines and major classics are listed at reasonable prices. Renaud Laurent doesn’t fall victim to the trend of overpowering wines. Finesse, balance and complexity are the words that describe his wine list :
conviviality, exchange and passion, those describe his service.
